Ingredients
For the Garlic Herb Roast Chicken:
1 whole chicken (or 4 bone-in, skin-on chicken thighs)
100g Butter
3 cloves garlic, minced
1 tsp Rosemery
1-2 Tbsp Parsley
½ tsp salt
½ tsp black pepper
Juice of ½ lemon (keep the peel)
1 cup of Broth. (for Roasting Pan)
For the Honey Balsamic Roast Pumpkin:
½ large pumpkin, cut into wedges
2 tbsp balsamic vinegar
1 tbsp honey
2 tbsp olive oil
½ tsp salt
½ tsp cinnamon
For the Feta Whip:
200g feta cheese
1/4 cup Greek yogurt or Cream Cheese
1 tbsp olive oil
Juice of ½ lemon
Black pepper to taste
Instructions
Step 1: Roast the Chicken
Preheat oven to 200°C (400°F).
In a small bowl, mix olive oil, garlic, herbs and salt, and pepper.
Pat the chicken dry, rub the mixture all over, under the skin and place in a roasting dish. Squeeze lemon juice over the top.
Pour into the roasting pan 1 cup of broth.
Roast 1 hour 15 minutes for a whole chicken, or until golden brown and juices run clear.
Step 2: Roast the Pumpkin
Toss the pumpkin wedges with balsamic vinegar, honey, olive oil, salt, and cinnamon.
Spread evenly on a lined baking tray and roast at 200°C (400°F) for 30-35 minutes, flipping halfway, until caramelized and tender.
