Ingredients:
Serves 4
20g butter or ghee
1 onion, finely chopped
3 garlic cloves, minced
1 tbsp fresh grated ginger
500g boneless chicken thigh or breast, cut into bite-sized pieces
2 tsp garam masala
1 tsp ground cumin
1 tsp yellow mustard seeds
1 tsp ground turmeric
1 tsp sea salt flakes
Black pepper, to taste
2 tbsp tomato paste
1 cup cream (or coconut cream for dairy-free)
Serve with Rice
Instructions:
In a large skillet or pan, melt the butter over medium heat. Add the onion and sauté for 2–3 minutes until softened.
Stir in the garlic and ginger, cooking for 1 more minute until fragrant.
Add the chicken and cook for 4–5 minutes, until browned on the outside.
Sprinkle in the spices—garam masala, cumin, mustard seeds, turmeric, salt, and pepper—and stir to coat the chicken well.
Add tomato paste and stir, then pour in the cream. Simmer for 5–7 minutes, until the chicken is fully cooked and the sauce thickens slightly.
Serve hot with rice and your favorite sides and enjoy!
