Cinnamon Roll Blondies: The Best of Both Worlds
If you love cinnamon rolls but don’t want to spend hours waiting for the dough to rise, these Cinnamon Roll Blondiesare the perfect solution. They have all the rich, buttery flavors of a classic cinnamon roll but in an easy-to-make, chewy blondie form.
Ingredients
For the Blondie Base:
120g (1 cup) all-purpose flour
1/2 teaspoon baking powder
110g (1/2 cup) melted butter
100g (1/2 cup) white sugar
100g (1 /2 cup) brown sugar
1 teaspoons vanilla extract
1 eggs
2 egg yolks
For the Cinnamon Swirl:
50g (1/4 cup) brown sugar
2 tablespoons melted butter
1 teaspoon cinnamon
For the Cream Cheese filling:
110g (4 oz) cream cheese, softened
50g (1/4 cup) white sugar
1 teaspoon vanilla extract
Instructions
Step 1: Prepare the Blondie Batter
Preheat your oven to 200°C (400°F). Line a baking dish with parchment paper and set aside.
In a mixing bowl, whisk together the flour and baking powder. In a separate large bowl, mix the melted butter, white sugar, and brown sugar until well combined. Add the vanilla extract, eggs, and egg yolks, mixing until smooth.
Gradually fold the dry ingredients into the wet ingredients, stirring until just combined.
Step 2: Make the Cinnamon, and Cream Cheese Swirl
In a small bowl, mix the brown sugar, melted butter, and cinnamon until a thick paste forms.
In a seperate bowl mix the cream cheese, sugar and vanilla until combined.
Step 3: Assemble the Blondies
Pour the blondie batter into the prepared baking dish, spreading it evenly. Dollop the cinnamon mixture and cream cheese mixture over the top and use a knife to swirl it into the batter for a marbled effect. (leave some cream cheese filling to drizzle on top)
Step 4: Bake
Bake for approximately 30 minutes or until the edges are golden brown and the center is just set. A toothpick inserted in the middle should come out with a few moist crumbs.
Tips for Perfect Blondies:
Don’t overbake: The center should be slightly soft when you remove them from the oven. They will continue to firm up as they cool.
For extra gooeyness: Slightly underbake them and let them cool completely before slicing.
Want a thicker blondie? Use a smaller pan and extend the baking time slightly.
