Iron-Rich Beef liver & Lamb Mince Koftas: a Nutrient Boost

Enriching your meatballs with beef liver is a fantastic way to boost the nutritional value while enhancing their depth of flavor. Beef liver is one of the most nutrient-dense foods, packed with essential vitamins and minerals like iron, B12, and vitamin A— all crucial for energy, brain function, and immune health. Iron-Rich Beef liver & Lamb Koftas with a Nutrient Boost

Lamb koftas are a flavorful and satisfying dish, but I wanted to take them a step further by making them even more nutrient-dense. To do this, I added pureed organic beef liver—an incredible source of iron and essential vitamins. Many people shy away from liver due to its strong flavor, but when blended into these koftas, it enhances the richness without overpowering the taste. Plus, using sourdough breadcrumbs helps balance the texture, making them juicy yet firm.

Ingredients:

  • 500g ground lamb

  • 100g pureed organic beef liver

  • ½ cup sourdough breadcrumbs (or normal breadcrumbs)

  • 1 small onion, finely grated

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • ½ teaspoon smoked paprika

  • ½ teaspoon cinnamon

  • ¼ teaspoon turmeric

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tablespoon fresh parsley, chopped

  • 1 tablespoon fresh mint, chopped

  • 1 tablespoon olive oil (for cooking)

Instructions:

  1. Prepare the Mixture: In a large bowl, combine the ground lamb, pureed beef liver, and sourdough breadcrumbs.

  2. Add Aromatics & Spices: Mix in the grated onion, garlic, cumin, coriander, smoked paprika, cinnamon, turmeric, salt, and black pepper.

  3. Incorporate Herbs: Stir in the fresh parsley and mint, ensuring everything is well combined.

  4. Shape the Koftas: Using your hands, form the mixture into small oval-shaped patties or skewers.

  5. Cook: Heat olive oil in a pan over medium heat. Cook the koftas for about 6-8 minutes, turning occasionally, until browned and cooked through.

  6. Serve: Enjoy with a side of yogurt sauce, flatbread, or a fresh salad.
