Why You’ll Love This Recipe

• Naturally sweetened – No refined sugars, just pure maple syrup.

• No waste – A delicious way to use up your sourdough discard.

• Nutritious & filling – Packed with oats, flaxseeds, and pumpkin seeds for sustained energy.

• Easy to make – Just mix, press, and bake!

Ingredients

• 1 cup sourdough discard

• 2 cups rolled oats

• ¼ cup ground flaxseeds or chia seeds

• ⅓ cup pumpkin seeds (or sunflower seeds)

• ⅓ cup maple syrup

• 1 tsp vanilla extract

• ½ tsp salt (optional but enhances flavor)

• ½ cup dark chocolate chips or chopped dark chocolate (optional but highly recommended)

Instructions

Step 1: Preheat & Prep

Preheat your oven to 175°C (350°F) and line an 8x8-inch baking dish with parchment paper.

Step 2: Mix the Ingredients

In a large mixing bowl, combine the sourdough discard, oats, flaxseeds, pumpkin seeds, maple syrup, vanilla extract, and salt. Stir well until everything is evenly coated. If using chocolate, fold it in last.

Step 3: Press into the Pan

Transfer the mixture into your prepared baking dish and use a spatula or the back of a spoon to firmly press it down into an even layer. This helps the bars hold together after baking.

Step 4: Bake

Bake for 20-25 minutes, or until the edges turn golden brown and the top looks set.

Step 5: Cool & Slice

Let the bars cool completely in the pan before slicing. This helps them firm up and prevents crumbling. Once cool, cut into bars or squares and enjoy!

Storage Tips

• Store in an airtight container at room temperature for up to 5 days.

• For longer storage, keep them in the fridge for up to 2 weeks or freeze for up to 3 months.

Serving Suggestions

• Enjoy as a quick breakfast on the go.

• Pack in lunchboxes for a healthy snack.

• Crumble over yogurt for a nourishing parfait.
