Banana Choc Chip Muffins- Refined Sugar Free

Healthy Banana Muffins

Makes 12 muffins

Ingredients:

  • 3 ripe bananas (mashed)

  • 2 eggs

  • ¼ cup melted coconut oil or butter ( I used Butter)

  • ⅓ cup honey or maple syrup

  • 1 teaspoon vanilla extract

  • ½ cup Greek yogurt or milk

  • 1 ½ cups flour (can use whole wheat)

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon cinnamon

  • ¼ teaspoon salt

  • Optional: ½ cup chopped nuts, chocolate chips, or blueberries

Instructions:

  1. Preheat oven to 175°C (350°F) and line a muffin tin with liners.

  2. In a large bowl, whisk together mashed bananas, eggs, melted coconut oil, honey, vanilla, and Greek yogurt.

  3. In another bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.

  4. Gradually fold the dry ingredients into the wet ingredients until just combined (don’t overmix).

  5. If using add-ins like nuts or chocolate chips, fold them in.

  6. Divide batter evenly into the muffin tin and bake for 18-22 minutes, or until a toothpick inserted comes out clean.

  7. Let them cool for 5 minutes before transferring to a wire rack.

Tips:

  • Swap Greek yogurt for applesauce if you want dairy-free muffins.

  • For extra protein, mix in 1-2 tablespoons of flaxseed or chia seeds.

  • Store in an airtight container for up to 3 days or freeze for longer storage.
