Easy No-Bake Lemon Slice (Zesty, Sweet, and Made from Pantry Staples)

Ingredients
For the base:
250g Homemade Digestive biscuits (or about 1 packet store brought) crushed
1 cup desiccated coconut
100g butter, melted
395g Homemade sweetened condensed milk (or 1 can store brought)
Zest of 1 lemon ( preferably organic)
Juice of 1 lemon
For the icing:
1½ cups icing sugar
2 tbsp softened butter
2 tbsp lemon juice
Extra desiccated coconut for sprinkling (optional)
Instructions:
Line a slice tin (around 20x20cm) with baking paper.
In a large bowl, combine crushed biscuits, coconut, lemon zest, melted butter, sweetened condensed milk, and lemon juice. Mix until everything is well combined and sticky.
Press the mixture firmly into the prepared tin and smooth the surface with the back of a spoon.
In a separate bowl, mix together icing sugar, softened butter, and lemon juice until smooth and spreadable.
Spread the icing over the base and sprinkle with extra coconut if desired.
Chill in the fridge for at least 2 hours (or until firm), then slice and enjoy!
